May 1st, 2026 marked the one-year anniversary of the opening of the Mosaic Restaurant at the Château des Tesnières. The labor of love having led to that grand moment required a full four years. It was to be a new chapter in the remarkable culinary career of Chantel Dartnall, having already won her award as one of the world’s premier female chefs at her Mosaic Restaurant in South Africa.

Located in the Ille-et-Vilaine department of Brittany, Vitré is renowned for its rich medieval heritage and well-preserved architecture. Often referred to as the "Gateway to Brittany," it played a pivotal role in the defense of the Duchy of Brittany during the Middle Ages, serving as a strategic stronghold on the border with Anjou and Normandy.
