Uplifted to heaven here on earth

May 1st, 2026 marked the one-year anniversary of the opening of the Mosaic Restaurant at the Château des Tesnières. The labor of love having led to that grand moment required a full four years. It was to be a new chapter in the remarkable culinary career of Chantel Dartnall, having already been awarded as one of the world’s premier female chefs at her Mosaic Restaurant in South Africa. 


From Pretoria to Brittany is no small step, and the work of re-creating a hotel & restaurant of equal calibre to the one she left behind was daunting. That is what made this May 1st such a worthy celebration. Incidentally, it was also my birthday, and on this occasion I ascended to heaven. 


Heaven, I want you to know, is on earth.

It is not a single place, except perhaps within one’s own heart. Yet there are places that lift us just that high. 

Some are temples. Others are landscapes of rare and startling beauty. Still others, devoted to the pursuit of beauty in its myriad expressions, are simply there to welcome us as special guests.


If you have never experienced the exquisite, or only brushed against it timidly, do not wait to die and go to heaven. Instead, offer yourself a pilgrimage to the Château des Tesnières.

There, the gardens recall an Eden you have long tried to imagine. The elegant, fairy-tale château welcomes you as though you had finally come home. Inside, like a child in a candy shop, you will find yourself swept up in a timeless torrent of artistic creation: fine art and objects from around the world, furnishings and décor curated with meticulous care.


Six exotic guest suites, each with their own distinct ambiance, pay tribute to inspiring and legendary women across continents and centuries, such as Scheherazade and the Queen of Sheba. Each suite is like a fantastical sanctuary of extraordinary and ecclectic art and antiques, its decor immersing you in the world which was theirs. 



The sumptuous and imaginative suites prepare you, restfully,  for the holy of holies: a singular dining experience that willl surely bewitch you, under the spell of the fairy-like Chef Chantel Dartnall. For beyond her technical mastery, she radiates something rarer: the pure joy of creation. From the fruits of the earth, she creates tastes that are surely divine, paired with the finest wines from the château's award-wining cellar.


This is a place where even the most seasoned epicurean feels a sense of awe.


Being treated to the Grand Dégustation, a ten-course dinner, I hardly know how to contain the journey into words. Each dish was a work of art with its own story, soul, and tantalizing savors. Documenting the details would have prevented me from enjoying the moment, so I have limited my presentation to the most astounding moments, such as the oyster, caviar, and seaweed, showcased on a blown-glass plate specially commissioned for the dish. 



Succulent mention for the masterfully prepared pigeon accompanied by a South African Cabernet Sauvignon.


The "Alchimist's Infusion" was like unto nothing you have ever imagined. Who ever thought vegetables would make for ambrosia?



This has been but peek inside. The pilgrimage is yours to make. The Château des Tesnières is located near Vitré, only an hour's journey from Paris by TGV.


As sure as the tide rises each day, Chef Chantel will be there to beguile you with her smile and enchant you with her culinary art.
